Vegetarian Casserole 1





        VEGETARIAN CASEROLE   

INGRIDIENTS
Spinach pasta or any other pasta of your choice
Olive oil
1 large carrot
2 or 3 baby marrows
Fresh mushrooms/1 can of chopped mushrooms
1 red onion
Fresh chives/fresh parsley
Fresh black pepper in grinder
Salt
Aromat/your favourite Italian spices blend

METHOD
·         Boil spinach pasta al dante
·         Chop vegetables as desires, keeping them chunky, except the carrots which should be fairly small for quick cooking.
·         SautĂ© the veggies in olive oil, beginning with the ones that take longest to cook.
·         Add a pinch of salt and grind in fresh pepper. Add a teaspoon or crushed garlic or according to taste and some herbal aromat and/or mixed herbs/Italian herbs mixture.
·         Set aside once al vegetables are tender.
·         Make a white sauce (preferably with real butter as I think it tastes so much better). The recipe is included below. I prefer a thicker sauce but this may be done according to taste (^^,)
·         When white sauce is ready add chopped fresh chives and add about ¾ of your grated cheese. You may turn off the white sauce and leave it simmering while you place your cooked ingredients in a casserole or individual bowls.
·         Layer the pasta at the bottom or the dish, followed by the veggies then pour the white sauce liberally over that. Lastly sprinkle the remaining cheese over this, grind fresh black pepper over that and pop into the microwave or oven for a few minutes or until the cheese melts and browns lightly.
·         Garnish with a few long chives or garnish of your choice and enjoy!!


INGRIDIENTS FOR WHITE SAUCE
Butter
Baking floor/bread floor will do
Milk
Salt
METHOD
·         Heat a saucepan and place a generous tablespoon of butter into it.
·         When it has melted, quickly stir in about 2 tablespoons of flour until a light paste forms.
·         Immediately start to pour in the milk while stirring rapidly making sure to avoid the floor forming lumps. If lumps form, use an egg beater or whisk to get rid of them. Pour in about half a cup of milk first then once the mixture is without lumps pour in the rest.
·         Throw in a pinch of salt and the chopped chives once the sauce thickens and starts to bubble then boil. Turn off the sauce and place the chopped chives and cheese in and leave to simmer stirring occasionally.
·         Proceed with recipe as above.
